such experience making its mark in Mumbai is FITOUR, the 14-seat
culinary concept by Chef Ashwin Singh, created in collaboration with Aspect
Hospitality, led by Hitesh Keswani.

We
walked into FITOUR expecting a tasting menu. What followed felt much
more like a carefully choreographed culinary journey.
Hidden
within House of Akina in Bandra West, FITOUR is the kind of luxe
dining experience where curiosity becomes an appetite in itself. There is an
almost conspiratorial pleasure to the 14-seat setting and, once the first
course arrives, you realise that the evening is going to be less about dinner
and more about discovery.
The
menu moves through familiar Indian flavours, memories and ingredients, often
taking them somewhere completely unexpected. There are moments of nostalgia,
moments of surprise and moments where familiar Indian ingredients seem to
acquire an entirely new vocabulary.
Chef
Ashwin Singh’s Culinary Story
For
Chef Ashwin Singh, FITOUR is deeply personal.

means intense passion in Hindi. It is a name I have carried with me since I was
seven, and the idea of having a space of my own stayed with me. More than
anything, I want every guest to leave having experienced a little piece of how
I see India.”

That
philosophy becomes evident as the courses unfold. FITOUR does not attempt to
simply reinterpret Indian cuisine for the sake of novelty. Instead, it appears
to use Indian flavours, memories and ingredients as a canvas for Chef Ashwin’s
own culinary journey.

Behind
this intimate culinary concept is Aspect Hospitality, with Hitesh
Keswani, Managing Director & CEO, bringing another important dimension
to the venture.

that strong point of view is exactly what comes through during the meal. FITOUR
feels less like a conventional restaurant launch and more like a carefully
developed culinary statement.
Indian
Flavours Through a Completely New Lens
Some
of the dishes at FITOUR are best left undisclosed. For food
connoisseurs, part of the pleasure lies in arriving without knowing exactly
what is coming next.
The
PANI PURI immediately sets the tone. Karela and amla bring a sharp,
lilting twist, while marigold, dum masala and that unexpected mint chocolate
note make the familiar street-food memory wonderfully unpredictable.
The
MANGALORE BUN & CELERIAC KALA MASALA is another revelation. The
sweetness of banana bread, habanero banana sauce and kala masala come together
with watermelon peel to add yet another flavourful layer. On the palate, it
creates an almost tornado-like burst of flavours.
The
TOMATO SOL KADI was perhaps our most refreshing pause — fermented tomato
water, young coconut, grilled pineapple and coriander coming together with a
beautiful balance of tang, smoke, sweetness and freshness.
And
then there is MITHAI SHOP. It is indulgent without becoming cloying,
nostalgic without becoming predictable.
There
are several more courses that we would rather leave for diners to discover
themselves. FITOUR is an experience where revealing too much can take away from
the anticipation.
The
Real Triumph Is the Progression
The
real triumph of FITOUR is the progression.
Course
after course, the flavours keep changing the pitch. One moment you are
transported into something familiar; the next, an unexpected ingredient or
technique completely shifts your perception.
For
serious fine-dining connoisseurs, it is this crescendo of varied flavours
that makes the experience so compelling.
The
food has a point of view. The experience has theatre. And Chef Ashwin
Singh’s personality is everywhere.
You
don't feel like you are eating an anonymous tasting menu. You feel like you are
being taken through Chef Ashwin Singh’s mesmerizing culinary world.
Does FITOUR Feel Michelin-Star-Worthy?
FITOUR doesn't feel like a
restaurant trying to tell you how important it is. It simply keeps bringing you
another course and letting the food make the argument.

VIEW: A MICHELIN-STAR-WORTHY EXPERIENCE.
Of
course, a Michelin Star is an official distinction awarded by the MICHELIN
Guide, and FITOUR should not be presented as a Michelin-starred restaurant
unless and until it receives that distinction. But as a reviewer's assessment,
the experience delivered the kind of creativity, precision, progression,
originality and culinary storytelling that made it feel worthy of the
comparison.
For
us, this was a genuinely memorable fine-dining experience — and one we would
happily return to.
