Running from 21st to 30th June 2026, the festival brings together Maharaj Pratapgiri Swami, Vegetarian Speciality Maharaj at Tuskers, and Maharaj Mahendra Singh Chundawat, Sous Chef at Fairmont Udaipur Palace, for a rare culinary collaboration rooted in generations of tradition. Inspired by the theme "When Heritage Travels," the experience highlights authentic recipes, indigenous ingredients, and timeless cooking techniques from the regions of Mewar, Marwar, Pali, and Banswara, offering guests a flavourful journey through Rajasthan's celebrated vegetarian legacy.
The meal began with BAJRA KI RAAB, a rustic millet soup that instantly felt comforting. Earthy, nourishing and deeply rooted in tradition, it had the kind of warmth that makes you slow down and savour every spoonful.
The NAGORI DHOKLA CHAAT was a delightful surprise. Crisp, tangy and layered with textures, it brought together the playful spirit of Indian street food while maintaining a refined touch.
Among the appetisers, JODHPURI MIRCHI VADA stole the spotlight. Perfectly crisp on the outside with a flavourful filling, it delivered just the right amount of spice. AJMERI SEEKH KEBAB was beautifully seasoned and aromatic, while the delicate MULMUL KE KEBAB lived up to its name, melting effortlessly on the palate.
Paired with the hearty DAL ZAIKA, the breads were exceptional. BEJAD KI ROTI had a rustic charm and nutty flavour, while the flaky MARWARI LACHHA PARATHA was impossible to stop nibbling on.
The fragrant MEWADI MASALA PULAO tied everything together beautifully, adding subtle spice and aroma without overpowering the meal.
