Water Chestnut & Asparagus Salad resets the palate — crisp, cool, and dressed in restraint. Taro Kebab brings smoke, softness, and spice together in perfect sync, followed by the show-stealing Rajma Nihari Morel, a slow-cooked, earthy marvel that replaces meatiness with soulful finesse.

Parmesan Yakhni Khandvi Ice-Cream with Pickled Papaya & Chilli is genius on a plate — creamy, sharp, and delightfully shocking. Butternut arrives next, mellow and nostalgic, comfort elevated to couture. Kootu Malabar Tamarind Curry with Appam is coastal India reimagined, a hug of tang and texture. Khichdi of India celebrates regional heritage with refinement, a golden, fragrant ode to home.

The sweet symphony begins with Pazham Pori, Banana Custard, Hazelnut & Chocolate Ice Cream, where Kerala nostalgia meets Parisian polish. Caramel Milk with Roasted Barley Ice Cream & Rose Cookie follows — subtle, warm, and breathtakingly balanced. The finale, Coffee Stone, closes the performance with a deep, aromatic note that lingers like a perfect memory.
