This September, TajSantacruz transforms its elegant Tiqri into a Punjabi haven with the Amritsar Food Festival (13th – 21st September, dinner only). The festival celebrates the soul of Punjab through food, culture, and hospitality.
The Chefs Behind the Magic
The evening was made
even more special by Chef Nitin Minocha of Taj Santacruz, who
warmly introduced us to Chef Raman Kumar from Taj
Swarna, Amritsar. Chef Raman’s humility and passion for his craft
shone through in every dish. Together, they curated a menu that wasn’t just
about food—it was about recreating the zaika of Amritsar.
A Feast of Flavours
We began with the
soulful Paya Shorba, its rich, slow-cooked essence awakening
the appetite. The iconic Makke di Roti with Sarson da Saag followed,
rustic and heartwarming, carrying the true taste of Punjab’s fields.
The Dal
Amritsari was velvety, comforting, and perfectly spiced, while the Soya
Chaap impressed with its smoky char and juicy bite. Of course, no
Punjabi feast is complete without Butter Chicken, and this
version was indulgent, creamy, and truly unforgettable.

The royal Panati
Ghosth stood out with its tender meat and deep, earthy flavours—a dish
steeped in tradition.
The Zaike da
Mela counters offered nostalgic bites—Mathris, Aam Papad, Chikkis,
and Meetha Amla—transporting us straight to the bustling lanes of
Amritsar.
Desserts Worth Indulging In
The dessert finale
was nothing short of spectacular. The crispy Jalebis, golden
and syrup-soaked, were paired with a bowl of silky, thick Rabdi
that was luxuriously smooth on the palate. Every spoonful of the rabdi with the
jalebi felt indulgent, decadent, and soul-satisfying—a true Punjabi sweet treat
that left a lasting memory. A glass of frothy, refreshing lassi
was the perfect closing note to this grand feast.

Décor & Ambience
The backdrop of Tiqri
set the perfect stage—its elegant interiors were subtly infused with Punjabi
motifs and vibrant accents that echoed the festival’s spirit. Warm lighting,
traditional touches, and live food counters added both charm and authenticity
to the experience.
